Mug Cake

I'm not the most creative in the kitchen and while I don't usually mind the kids helping out, I hardly ever actually invite them into the kitchen to make something.

So, I when I came across this recipe in our local parent's magazine I thought I'd give it a go after dinner last night. One mug, one spoon. One measuring cup. Now this is my kind of recipe.

It turned out well and they were excited to make their very own creations. And since it involved chocolate and ice cream I figured we couldn't go wrong.

Here's what it looked like after the ingredients were stirred in the mug. Notice Haviland snuck a few licks as the recipe came together.

Mug Cake
(Feeds two… if you share)

4 Tbsp. flour
4 Tbsp. sugar
2 Tbsp. cocoa
1 egg
3 Tbsp. milk
3 Tbsp. oil
3 Tbsp. chocolate chips
1/4 tsp. vanilla extract
1 large microwave-safe coffee mug

Add dry ingredients to mug and mix well. Add the egg and mix thoroughly. Pour in the milk and oil and mix really well. Make sure to get all dry ingredients from the bottom incorporated or they will leave a floury top when you tip the cake onto a plate. Add the chocolate chips and vanilla extract, and mix again.

Put mug in the microwave and cook for three minutes at high. The cake may rise over the top of the mug, but don’t freak out! Cool a little, and tip out onto a plate. Add ice cream or frosting to decorate if you want. Enjoy!
